The Brand Story 

It started as a joke. Then we tasted it. 

While visiting family in Bayou Boeuf, Louisiana, during the Dubai chocolate craze, I joked with my kids that if Dubai could have Dubai Chocolate, we should make Da Bayou Chocolate. The name stuck, and before long we were experimenting in our family kitchen. But if we were going to create a Louisiana answer to Dubai Chocolate, pistachios were not going to be the star. For us, it had to be pecans. 

Drawing inspiration from generations of pecan praline recipes in our Granier family cookbook, my kids and I began developing our own pecan praline cream. We made batch after batch, brought samples to friends and parties, listened to what people loved, and kept refining it. The response was almost always the same: "You have to make 
this a product." 

After hundreds of tastings and plenty of R&D, we realized something important. The cream wasn't just an ingredient in Da Bayou Chocolate. It was the star. 

So we gave it a name: Da Bayou Mud™. 

Today, Da Bayou Mud is our signature pecan praline cream, made with premium roasted pecans sourced from a Louisiana family farm and crafted in the heart of Cajun Country. It is delicious straight from the jar, spread, dipped, filled, or baked - and it is the foundation for the rest of the Da Bayou family. 

Dubai inspired the idea. Louisiana made it ours. 

Da Bayou Mud™ is the core of our product line. The chocolate products and Crunch are expressions of the signature Mud, with more to come!

Da Bayou Crunch™	Da Bayou Mud with Crispy Kataifi  Our signature Da Bayou Mud combined with crispy kataifi for added texture and crunch. It keeps the pecan praline flavor at the center while adding the crisp texture that helped inspire the original Da Bayou concept thanks to Dubai.
Da Bayou Chocolate™  Milk	Milk Chocolate + Da Bayou Mud + Kataifi  The original Da Bayou Chocolate concept brought to life: milk chocolate paired with our signature Da Bayou Mud and crispy kataifi. A Louisiana-inspired answer to the viral Dubai chocolate experience, built around pecan praline instead of pistachio cream.
Da Bayou Chocolate™  Dark	Dark Chocolate + Da Bayou Mud + Kataifi  A richer, deeper chocolate expression of the Da Bayou concept, combining dark chocolate with our signature Da Bayou Mud and crispy kataifi. The darker chocolate balances the sweetness of the pecan praline cream while keeping Mud at the center of the experience.
